About

Great River Organic Milling is located on the upper Mississippi River, in the heart of what is called the Hiawatha Valley. The natural beauty of the area is a constant reminder of the importance of our commitment to organic agriculture. Organic, or sustainable agriculture is more than the avoidance of chemical fertilizers and pesticides. An organic farm strives to protect our environment by building and maintaining healthy soil which, in turn, improves water and air quality. It has been shown that grain and other food crops grown in a healthy soil, resist pests and diseases better than conventionally grown crops and also contain more vital nutrients important to humans. Consuming organic foods promotes the health of individuals and the land on which it was grown. In supporting organic agriculture we promote the cycle of a healthy environment which includes the lives of microorganisms, plants, and humans. Most Great River flour is stone-ground. We believe the natural granite millstones contribute to the quality, taste and nutritional integrity of whole grain flour. Grain flowing into the stones becomes very thin, flat flakes which integrates all parts of the wheat immediately into the flour, allowing the flour to have more flavor. The cooler temperatures that occur during milling with stones allows important enzyme activity to continue. Protein levels are also be maintained. Our stone-ground flours are milled to order, to retain the nutritional value of the flour. Great River is Certified Organic by Quality Assurance International and Kosher approved. Obtaining our certification requires a yearly inspection of our milling facility and records to insure that our products meet industry standards.

      Great light color rye flour

      I didn’t know rye floor came dark, light and white . ( messed up a few loafs testing) talked to a real bread maker . Told me to look on Bolo for light or white . Found this one cheap per pound . Made my first sour dough rye on a pizza stone in my oven . Holy cow ! It came out better than big stores make . Cause I made it ! This very clean organic four was the main reason for my success. Thank you Great River for you great product! 25lbs of flour sounds like a lot . But when it comes out this good I’ll be buying again soon!

      Makes wonderful bread

      Great River Milling Rye FlourThis flour makes insanely good bread. The bags I've purchased have always been fresh and promptly delivered. As others have mentioned, I'd categorize the flour as a medium-light rye. I've tried other brands and always keep drifting back to this one.My favorite recipe uses 650g of unbleached bread flour, 150g rye flour, 200g sourdough starter, 30g caraway seed, 20g salt, 3g dill and 2g of commercial yeast, following the overnight ferment technique laid out in both Robertson's "Tartine Bread" and in Ken Forkish’s, "Flour, Water, Salt, Yeast."

      Great quality rye flour

      I use a lot of flour, and had really wanted to buy a good quality 25 lb bag of rye, after looking around this appeared to be the best. I bake breads in traditional fashions, poolish, biga, straight doughs, and sour doughs, usually boules using cane proofing baskets. I wanted to make a German rye bread with Caraway seeds for a friend's party. Having never worked with high percentage rye loaves, I opted for 80 percent hydration similar to my whole wheat recipes. In the future I'd use 75 percent hydration with this flour and an hour long autolyse. The flour was fresh and easy to work with, very happy with the mill.

      Excellent Flour

      This flour has great flavor, arrives very fresh, and is ground finely enough to work with easily. As much as I like Bob's Red Mill rye flour, this has at least the same quality at a better price point. I'd love to be able to buy it in a 5 pound sack.

      Tasty

      This flour when baked into my dark rye bread gives a wonderful aroma and good taste. It is a uniformly ground, fine flour, albeit whole rye. I've noticed other "dark rye" flours have some coarser components. Both are good. It is my understanding that this is milled to order and so is very fresh.
